This time of year, I usually make some kind of soup or stew every week. This week I whipped up an oldie but a goodie... 𝘾𝙤𝙧𝙣 𝘾𝙝𝙤𝙬𝙙𝙚𝙧!!
1 onion, chopped
2 celery stalks, chopped
2 garlic cloves, minced
2 large potatoes, diced
1 cup frozen organic non-gmo corn
1 zucchini, diced
4 cups bone broth
1 tsp cumin
1/2 tsp paprika
1 bay leaf
Sprig of fresh thyme
Himalayan sea salt & pepper
1 cup coconut milk
1. Sauté onion and celery in pot. Add garlic and sauté till aromatic. Add all remaining ingredients except coconut milk. Simmer for 20-25 mins.
2. Remove bay leaf. Add 1 cup coconut milk.
3. Remove and blend 1/3-1/2 of chowder mixture. Replace to pot and serve.
I like to add fresh herbs and crumbled bacon to my bowl too. Enjoy! 😘
