A lot of the veggies used in these recipes are perfect for the current reality because they have a long shelf life - carrots, onions, potatoes, and cabbage are great and versatile staples! Dried herbs can replace fresh, and you can usually substitute hard to get veggies with something that you have on hand!
Getting creative with what you have on hand is one way to keep from getting bored with your meals and can help you save $ on take out (but also if you can help support local restaurants!)
